Ingredients
3 large eggs, separated
½ cup full-fat cottage cheese
¼ tsp cream of tartar
¼ tsp baking powder
Pinch of sea salt
Instructions
1. Preheat oven to 300°F and line a baking sheet with parchment paper.
2. Separate the eggs and beat the whites with cream of tartar until stiff peaks form.
3. Blend cottage cheese with egg yolks, baking powder, and salt until smooth.
4. Gently fold the egg whites into the cottage cheese mixture using a spatula.
5. Scoop the batter into rounds on the baking sheet, spacing evenly.
6. Bake for 25–30 minutes or until golden and set.
7. Let the bread cool in the oven with the door slightly open for 10 minutes.
