Description
Blueberry fluffy cottage cheese cloud bread that’s gluten-free, high-protein, and as light as air. Perfect for snacks or brunch.
Ingredients
3 large eggs, separated
1/2 cup full-fat cottage cheese
1/4 tsp cream of tartar
1 tbsp honey or maple syrup
1/4 cup fresh blueberries
Pinch of salt
Instructions
1. Preheat your oven to 300°F (150°C) and line a baking tray with parchment paper.
2. Beat egg whites with cream of tartar until stiff peaks form.
3. In a separate bowl, whisk egg yolks, cottage cheese, honey, and salt until smooth.
4. Gently fold the egg whites into the yolk mixture using a spatula.
5. Fold in blueberries carefully, being sure not to deflate the batter.
6. Scoop batter into rounds on the prepared tray and bake for 25–30 minutes.
7. Turn off oven and let bread cool with door cracked open for 10 minutes.
8. Serve warm or store in the fridge once fully cooled.
Notes
Use full-fat cottage cheese for best texture.
Drain cottage cheese with cheesecloth to reduce moisture.
To freeze: place parchment between each slice and freeze in a zip bag.
